Easy Banana and Oat Cookies with Chocolate Chips, banana crisps and honey. Soft, crispy, moorish and sooo delicious is impossible just to have one. Eat them as breakfast cookies, afternoon snack with tea or coffee or after a work out for a protein boost.
Make them in batch so you always have them on hand when hunger strikes, especially around that mid-morning and mid-afternoon lull when only something sweet will do and you’re trying to avoid unhealthy munchies like chocolate and sweets, instead be guilt free with these super healthy devilish clusters of goodness.
WHY SHOULD YOU MAKE THESE BANANA AND OAT COOKIES
Don’t you find it annoying when you get that mid-morning / mid-afternoon hunger at work and the only thing you find to eat are chocolates, crisps, or sweets? And you’re trying to eat healthy!! Yeap, I feel you….
These cookies are packed full of nutritious ingredients like coconut, oats, bananas, honey and eggs, foods that not only are super healthy and protein rich but that help control hunger guilt free!!
They keep really well in jar for at least a week, more if you keep in the fridge. They bake in 20 minutes and are gluten free, bearing that you buy gluten free oats!!
And if you work out, these are really good to eat before so you have a boost of energy and don’t feel hungry during the work out, or after for a boost of protein for that muscle building.
I always have these cookies in my kitchen, every time I go out I put two or three in a sealed bag or jar and take them with me for when I feel hungry whether in the morning or during the day.
I have a gluten free, dairy free diet and is always difficult to find snacks or munchies to eat that don’t make me ill so these cookies are a god sent, plus I know what they have in it and is all goodie stuff!!
PRINT THE RECIPE
Easy Banana and Oat Cookies with Chocolate Chips, banana crisps and honey. Soft, crispy, mourish and sooo delicious is impossible just to have one. Eat them as breakfast cookies, afternoon snack with tea or coffee or after a work out for a protein boost.
- 400 gr Oats
- 1 Egg
- 2 tbsp Honey
- 50 gr Sugar
- 1 tps Salt
- 50 gr Dark chocolate chips
- 50 gr Banana crisps
- 200 gr Soft Coconut oil
- 1 Banana
- 1 tsp Baking powder
In a bowl add the soft coconut oil , sugar and salt and mix until it's formed a smooth cream. Set aside
Mash the banana using a fork and add it to the coconut cream and mix
Add the free range egg and continue to mix well
In a board chop the banana crisps trying to avoid flying off the board like it did to me!! 🙂 and set aside. Chewy banana chips are also good
Add the oats and mix well using a spoon. You mind it easier to mix using your hands.
Once all the oats are mixed add the baking powder, chocolate chips and banana crisps and continue to mix with your hands
Add the honey and continue to mix
Once the dough is ready start to make the balls. I like to use a tablespoon or ice cream scoop to portion each cookie. Place the balls onto a baking sheet lined with parchment paper to avoid sticking
Once all the dough is used place the tray into a pre-heated oven at 170 degrees C for 15 to 20 minutes or until the balls are golden brown
Once baked leave them to rest for 5 minutes on the tray and then place them on a cooling rack until they are fully cooled down
Keep them in a jar or plastic container with lid. You can also keep them in the fridge, this way they will last more than a week.
One of the reason I started making these Banana and Oat Cookies with Chocolate Chips and all of the ones similar like my Healthy Quinoa Bars or my Gluten Wheat Free Granola recipe, which by the way is amazing!! Was because I love all these nuts and fruit bars but I can’t eat any of the shop bought ones because they make me ill.
I find that although they say “healthy” pure ingredients all the preservatives and nasty things they have to keep them fresh for longer don’t agree with my body, so, I decided to make my own… and not only these are 10 times more delicious than the shop bought ones, but I know they have no nasties in them, so I don’t get ill.
FEEL HUNGRY WHEN WORKING OUT
