This Gluten & Wheat Free Granola Recipe has all the flavour and goodness of a traditional home-made non gluten free granola.
Every time I see on TV nutritional experts saying that breakfast is the most important meal of the day and that we should not miss it, but frankly I hate process granola, is tasteless and is made of 90% oats, which realistically I might just well eat a plate of oats with half of the price of shop bought granola.
So I decided to make my own granola, yes is more work, yes it might be a bit more expensive, but I add the ingredients I really like and most importantly I know what it has!
As with a lot of my recipes this too is very versatile, you add the ingredients you prefer and avoid those you don’t like, I even sometimes add a bit of chocolate chips and you can do that too if this is what you fancy. You can make it vegetarian or 100% vegan, so very versatile.

For this recipe I prefer to use coconut oil instead of vegetable or olive oil because the nuts crisp up better with the coconut oil. But if you prefer your can swap the coconut oil for olive or vegetable oil.
Serving suggestions
Option 1
My preferred method of eating this granola is of course with natural unsweetened yoghurt. For a cup of yoghurt I add 3 or 4 Tbsp of granola, perfect as a light breakfast. If I’m the go I chuck in some yoghurt and granola in a Thermo container and eat it whilst on the underground, bus or train on my way to work.
I don’t add extra sweetness like honey, agave or sugar because for me the granola is sweet enough, but if you like it a bit sweeter by all mean add more honey, agave or maple syrup.
Option 2
I also like to eat it with some mixed fruits like wild berries. I mix a bit of fresh wild berries with a bit of sugar and a few drops of lemon, leave to mingle all together until the sugar dissolved, then add 3 or 4 Tbsp of granola, mix and enjoy!
Option 3
I often eat it as a mid-afternoon snack whilst at work. I simply put some granola in a plastic container and munch through it at around 4 pm with a cup of coffee. Is crunchy, delicious, healthy and packed of goodness! Much better than a piece of cake or chocolate bar.
