I am by no means vegetarian or vegan, but slowly I am reducing the amount of meat and animal products from my diet, milk being one of them.
And a great alternative to cow milk is Almond Milk, I certainly prefer it over oat or rice milk. Is creamier, tastier and I think it goes well with more drinks or dishes than oat or rice milk.
Plus is so easy to make at home that to me the change is a no brainer! and you know exactly what ingredients it has.
If you have shop bought almond milk you’ll know that it contains a tiny 2% of almond milk and 98% water and other ingredients, merely an almond drink in my opinion. With this recipe though you’ll have a bottle full of 100% almond milk.
The first time I was offered almond milk I was a bit like, no thank you, but having tried this recipe it definitely converted me into this healthier and refreshing drink.
Of course as with everything the best milk comes out of the best almonds, and I find that making it with the raw green almonds instead of the brown dried ones, the milk comes out super creamy and absolutely delicious. The downside is that raw almonds are only available in Summer and you would need to have an almond tree to have them as they are not widely available.
PRINT THE RECIPE

- 1 cup of sweet almonds
- 3 cups of water
- 3 dates or 3 tbsp of sugar
- a pinch of salt
- 1/4 tsp of vanilla extract
- water to soak the almonds

Place the almonds in a bowl and cover with water. Leave to soak over night

Next day drain the almonds and place them in a blender of food processor with the 3 cups of water, vanilla and dates or sugar.

Blend everything at maximum speed for 1.5 to 3 minutes.

Sieve the milk. Don't dispose of the meal leftover as this can be use to make almond flour.

Once sieved add a pinch of salt and mix well.

Put the milk into a glass bottle or container and keep in the fridge.

STORING AND SHELF LIFE
This milk will keep for 3 to 4 days in the fridge. As with all drinks I prefer to use glass bottles instead of plastic or melamine bottles because I feel they keep better and glass doesn’t change the taste of the drinks.
GREEN ALMONDS
These are raw green almonds. At this stage the almonds are creamier and have a more milky taste than when they are “dried”.
If you’re looking for an alternative to cow’s milk that can be use for breakfast cereal, tea, coffee and hot chocolate then this is the recipe for you.
You will not be disappointed because this almond milk is really delicious and has a creamy taste without the heaviness and fat of cow’s milk or cream.
