- 300 gr short crust pastry
- 2 free range eggs
- 2 free range yolks
- 80 gr caster sugar
- 200 ml full fat milk
- 100 ml double cream
- 2 Granny Smith green apples
- 2 tbsp caster sugar for sprinkling on top
With a roller pin extend the short crust pastry until is about 1.5cm thick and carefully place in a pie tin previously buttered or sprayed with non-stick oil
In a bowl mix the milk, cream, eggs, 80gr of sugar, flour and mix until all the ingredients are combined.
Peel the apples and cut them in slices removing the core. Place them in a small bowl with water and lemon juice to avoid oxidation (turning black)
