How many times we run out of the house in the morning without having time for breakfast and then find ourselves around 10 o’clock scratching our desk drawers trying to find something to eat so you can resist until lunch time.
So this week I wanted to share with you guys my favourite Power Breakfast Smoothie with Beetroot, Carrot and Coconut Milk and you’re going to love it!
Is so delicious and nutritious that you almost feel doing good whilst drinking it. Is like having a full breakfast in a smoothie to go that will keep you full up for the entire morning, guaranteed!! Plus is vegan, gluten free and lactose free.
One of my favourite juice is called “3 in 1” a traditional Venezuelan juice made of beetroot, carrot and orange juice. I know it sounds strange calling it “3 in 1”, but at home juices are mainly mono fruit, except for this one, hence the name.
I love this juice but this time I wanted to make something creamy and full of ice that was even more refreshing and indulgent without the heaviness of full fat milk or cream, yet with the same filling and health properties than the original “3 in 1” juice, so the coconut milk came out!
I drink this smoothie every time I know I won’t have time to eat breakfast or lunch because it keeps me full all morning. I like to make a big jar and keep it in the fridge for 3 days so I can put it in my Thermos ready to drink on the train, bus or when I get to work.
And by keeping it in the Thermos it stays cool and fresh throughout the morning in case I can’t drink it all at once, although, is hard not to, is so good.
POWER BREAKFAST SMOOTHIE with BEETROOT, CARROT and COCONUT MILK – PRINT THE RECIPE

This smoothies is so delicious and nutritious that you almost feel doing good whilst drinking it. Is like having a full breakfast in a smoothie to go that will keep you full for the entire morning, guaranteed!! Beetroot, carrots, orange juice, lime and coconut milk all in one power breakfast morning, healthy and very filling.
- 1 medium Raw Beetroot
- 2 medium Carrots
- 2 medium Oranges (juice only)
- 400 ml Full fat coconut milk
- Ice
- 1.5 Lime (juice only)
- 3 Tbsp Sugar

Peel the carrots and beetroot and chopped them into small pieces

Squeeze the 2 oranges

In a blender or food processor add the beetroot, carrots and orange juice and blend until it has become a pulp

Add the coconut milk, lime juice, and sugar and blend everything well until everything has become creamy and smooth, serve!
- I like to add ice and blend again so is a bit frapé and colder, but this is optional.
- If you're making a big jar to leave it in the fridge then definitely don't add the ice as melting ice will water the smoothie out.

SUMMER SMOOTHIE
Without a doubt this is a fantastic smoothie for Summer. I made it for a friend’s BBQ this weekend and even the more sceptical were pretty pleased with it. Is refreshing, vibrant, zesty, creamy and sweet all in one glass.
I added lots of ice because we were drinking it straight away, but if you’re keeping it in the fridge for a few days then definitely don’t add the ice or added just before drinking it.
MORE COCONUT MILK SMOOTHIES
I love coconut milk, in fact, I make a lot of things with coconut milk, and how not? Coconuts are almost our national fruit, so we use it a lot!
If you’re the same as me, ie love coconut, you have to try my Venezuelan Coconut Smoothie and my Venezuelan Coconut Dessert.
I know it sounds like a lot of coconut, but believe me they both have the right amount of coconut to make them indulgent and delicious without overpowering in the coconut flavour. And as always they are both super easy to make!!
