We’re in summer, or so the calendar says, so this is the time to bring out all of those recipe for “take out” food, and this chicken pie is one of those that should definitely be in every picnic basket!
I does take a little bit of time to make but is definitely worth it… Pulled chicken cooked in tomato and spiced up with Cayene pepper and Paprika, plus a whole lot of vegetables…
PRINT THE RECIPE
- 800 gr Pulled chicken
- 400 gr tin tomatoes
- 1/4 green pepper
- 1/4 red pepper
- 1/4 orange pepper
- 1/2 leek
- 2 garlic cloves
- 1 small onion
- 1 Tbsp of Paprika
- 1/2 tsp of Cayene pepper add more if you like it hotter
- 2 Tbsp Worcester sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 Cups chicken stock or water
- 1 tsbp dried garlic powder
- 1 Tbsp tomato paste for colour
- Fresh chopped parsley optional
- 500 gr already made Puff Pastry
- 250 gr Grated Cheddar cheese optional
- 1 free range egg
In a pan add some vegetable oil and stir fry all the vegetables (onion, peppers, garlic and leek)
Leave to cook for approx 10 minutes or until the vegetables are half way cooked but still have some crunch
Add the pulled chicken, tin tomatoes, spices, seasoning, stock or water and tomato paste and stir everything together.
Leave to cook for approx 10 minutes. The meat should not be dry but neither to watery otherwise it will make the dough soggy.
Once the meat is ready set aside to cool.
In the meantime extend the puff pastry. 500gr will give you a pie of 42 x 32 cm dividing the dough block in 2 halves, one for the base and one for the lid.
Once the dough has been extended and the chicken cooled the pie can be prepared.
Place the base (one sheet of dough) over a baking tray previously lined with oven or parchment paper.
Once done, add the chicken spreading evenly so all the surface as equal quantity of chicken.
Add the grated cheese evenly distributing all over the chicken.
Once done, add the second sheet of dough (the lid).
Attach all borders of the pie (bottom sheet with lid sheet) tight pressing both sides together.
With a fork prick all over the centre of the pie
Beat an egg and do an egg wash all over the pie surface
Place in a pre-heated oven at 200/220 degrees C for 20 - 25 minutes or until the top of the pie is golden brown.
Remove from the oven and leave to cool over a rack.
This pie can be eaten cold or hot.
