Although in Venezuela we only use Reina Pepiada or Pulled Chicken and Avocado filling for arepas, I think is also very nice for sandwiches, baguettes, panini, jacked potatoes and wraps.
In the UK people use a filling made with tuna, mayonnaise and sweetcorn, but I think the Reina Pepiada is an excellent alternative because is not only DELICIOUS but also very healthy.
Imagine filling a warm artisan baguette with a zesty and creamy pulled chicken, avocado and lime filling … is simply the best pulled chicken sandwich.
PULLED CHICKEN AND AVOCADO SANDWICH AND AREPA RECIPE
PRINT THE RECIPE
- 500 gr of pulled chicken
- 1 avocado
- 1/2 white onion
- handful of fresh coriander
- 1 tbsp of mayonnaise
- 1 tsp of american mustard
- salt and black pepper to taste
- 1 lime
- 3 tbsp of extra virgin olive oil
1. Chop the onion, avocado and coriander and place in a bowl
2. Add the pulled chicken, mayonnaise, mustard, lime, olive oil, salt and black pepper
3. Mix everything very well as to break the avocado slightly and the mix becomes creamy.
4. Serve immediately
This recipe keeps well for at least 3 days in a plastic or better still glass container with lid and in the fridge. Is not good for freezing.
VEGETARIAN AND VEGAN OPTION
If you have a vegetarian or vegan diet, don’t worry, you can substitute the chicken for a vegetarian or vegan meat option like Quorn chicken pieces.
But if you prefer not to have any meat like ingredient, then omit completely the chicken and just make it with the avocado, onion, lime and coriander which is very nice too.
