Finally Christmas is here and so the eggnog! In Venezuela Christmas without eggnog is no Christmas! Probably when you here the word eggnog you think of the American version, but, our traditional recipe is slightly different and in my opinion a lot more delicious.
This Venezuelan eggnog is boozy, creamy, full of spices and comes with all those Christmasy flavours we want for the holidays, and is so easy to make you can make a batch even if you have guests around.
Venezuelan Eggnog can be made with any spice and flavourings you like, in fact, I’m working on a dairy free version for all of you and me that can’t have the traditional recipe, so watch this space!
RECIPE

This Venezuelan eggnog is boozy, creamy, full of spices and comes with all those Christmasy flavours we want for the holidays, and is so easy to make you can make a batch even if you have guests around.
- 6 Free range egg yolks
- 1/4 cup Condensed milk
- 1 tsp Cornstarch
- 2 cups Full fat milk
- Mixed spices
- 1 Orange (peel only)
- 1 tsp Vanilla extract or 1 vanilla pod
- 1/2 cup Venezuelan dark rum

So the first thing is to slightly warm up the milk under the lowest heat setting you have in your hob, and to this add the orange peel

Once the milk is slightly warm add a couple of tbsps to the beaten yolks and mix well, this is going to avoid the yolks curdling when added to the milk. Then add the yolks to the milk and mix well.

To make it even thicker I’m adding a tsp of corn starch dissolved in a tbsp of milk Add the vanilla extract or a vanilla pod and all spices and mix well.

Leave to cook until it thickness, this can take between 5 to 10 minutes stirring constantly to avoid the milk sticking to the pan and burning. If the mix curdles a bit don’t worry it will sifted later on.

Let it cool down for a bit and add the condensed milk and dark Venezuelan rum to taste.

Once it has cooled down sift it through to remove any lumps and orange peel. Serve cold in glasses with mixed spices sprinkled on each glass.

This eggnog will happily keep in the fridge for 2 weeks kept in a glass bottle
