Pulled Chicken and Avocado Filling Recipe

Pulled chicken and Avocado is a delicious and healthy filling for arepas, baguettes, sandwiches, wraps and jacked potatoes. The avocado gives it a super creamy texture and taste yest ultra healthy and the coriander and lime contrast this creaminess with a zesty burst that lifts the entire recipe for an incredible punch of flavours.

  • 500 gr of pulled chicken
  • 1 avocado
  • 1/2 white onion
  • handful of fresh coriander
  • 1 tbsp of mayonnaise
  • 1 tsp of american mustard
  • salt and black pepper to taste
  • 1 lime
  • 3 tbsp of extra virgin olive oil


  1. 1. Chop the onion, avocado and coriander and place in a bowl
  2. 2. Add the pulled chicken, mayonnaise, mustard, lime, olive oil, salt and black pepper
  3. 3. Mix everything very well as to break the avocado slightly and the mix becomes creamy.
  4. 4. Serve immediately

Recipe Notes

This recipe keeps well for at least 3 days in a plastic or better still glass container with lid and in the fridge. Is not good for freezing.
