  • 300 gr short crust pastry
  • 2 free range eggs
  • 2 free range yolks
  • 80 gr caster sugar
  • 200 ml full fat milk
  • 100 ml double cream
  • 2 Granny Smith green apples
  • 2 tbsp caster sugar for sprinkling on top

  1. With a roller pin extend the short crust pastry until is about 1.5cm thick and carefully place in a pie tin previously buttered or sprayed with non-stick oil

  2. In a bowl mix the milk, cream, eggs, 80gr of sugar, flour and mix until all the ingredients are combined.

  3. Peel the apples and cut them in slices removing the core. Place them in a small bowl with water and lemon juice to avoid oxidation (turning black)

  4. With a fork prick the pastry on the bottom to avoid moisture building. Place the apple slices around the edge until filling all the tin

  5. Pour the liquid over the apples and sprinkle the 20gr of sugar left.

  6. Bake in a preheated oven at 180C for 45 minutes.

  7. Serve warm or cold
