Layers of rich tomato sauce, smoked ham and free range egg topped with creamy Mozzarella, dried oregano and olive oil. Perfect for breakfast, brunch or a light lunch, and if you're into healthy food whether just for January or in general they are super healthy too!!
In a pot add a can of chopped tomatoes, dried oregano, salt and black pepper to taste, Sriracha sauce, fresh basil, garlic and the chopped capers and sun blushed tomatoes.
Leave the sauce to cook for approx 15 minutes at a low to médium temperature
In a separate pan add a tbsp of olive oil to warm through the ham until is crispy, you can also use bacon.
Once all the ingredients are cooked we start to make the individual portions by oiling a couple of ramekins. For this video I made 2 ramekins, but the sauce and the ham will be enough for 4 or 5 ramekins.
Once the portions are done add a couple of slices of Mozzarella for pizza. To finish sprinkle some dried oregano and drizzle olive oil over each ramekin.
Bake in a preheated oven at 180C for 8 to 10 minutes for a soft yolk and 12 to 15 minutes for a hard yolk.
Once done remove from the oven and serve!
