Mash potato I think is one of those stable dishes found everywhere in the world we to go. In light of this and in the fact that I really like sweet potato, I thought how about a healthy sweet potato mash with a bit of umphhh that goes beyond the butter and cream… hey presto Zest and Spicy Sweet Potato Mash Recipe.
I made this mash for several catering bookings and of all the food I make this mash was for sure one of those success options. Perhaps because the combination of Parmigiano cheese, lime, Coriander and sweet potato is not the most common combination, yet, I think it works really well.
PRINT THE RECIPE

- 450 gr Sweet Potato
- 3 Tbsp of fresh chopped Coriander
- 1/4 cup of grated Parmigiano cheese
- Juice of 1/2 lime
- 1/2 Tsp of salt
- 1/4 Tsp Cayenne Pepper
- 1/2 Tsp Smoked Paprika

Bake the sweet potato until soft

Once cooked peel and chop in small pieces

Place the potato in a board and mash with a fork. Once mashed add the Coriander, Parmigiano cheese, salt, Cayenne Pepper, Paprika and Lime.

Mix all the ingredients using a fork until everything is well mixed.
