If you’re one of those people that love easy quick cooking then you’re going to love this Easy Sausage and Vegetables Stir Fry that’s ready 20 minutes from prepping to table and has a unique “sweet, sour, tangy” flavour combination. Is delicious, has very little oil and no carbs!!
I love making stir fries especially when I don’t have much time to cook and want something yummy, healthy, freshly made and quick! And this Easy Sausage with Vegetables Stir Fry is perfect.

Easy Sausage and Vegetables Stir Fry that's ready 20 minutes from prepping to table and has a unique "sweet, sour, tangy" flavour combination. Is delicious, has very little oil and no carbs!!
- 2 Sausages Any meat or veggie will do
- 1/4 Green bell pepper
- 1/4 Red bell pepper
- 1 Garlic clove
- 6 Mushrooms Any type of mushroom
- 1/2 White onion
- 3 tbsp Fresh dill
- 4 tbsp Vegetable oil
- 1 pinch Chilli flakes Optional
- Salt & Black pepper to taste
- Fresh parsley for decoration
- 150 gr Sugarsnaps
- 1 medium Carrot

In a hot pan add the oil and leave to warm up. Once warm add the sausages cut in pieces and brown.

Once the sausages are brown remove from the pan and set aside.

In the same pan add the sliced onion and peppers, stir and leave to cook for a couple of minutes

Then add the garlic crushed with a garlic crusher or finely chopped. Stir and add the sugarsnap and stir again. Add a splash of water to get the cooking going without adding extra oil. Leave to cook for a couple of minutes

Add the mushrooms chopped in small pieces and stir again. Leave to cook for a couple of minutes. Then add the carrot slices, which I previously made using a vegetable peeler to make very thing slices (see video), stir and leave to cook.

Season with salt and black pepper to taste and add a pinch of chilli flakes (optional), stir and leave to cook for a couple of minutes.

Once the onion and bell peppers are soft add the sausage back to the pan and stir everything together and leave to cook for another minute and serve hot!!

Sprinkle some chopped parsley and squeeze lemon juice over the plate to add the zingyness to the dish.
- I like my veggies to be crunchy, following this method you're onions, peppers and mushrooms with be soft but the sugarsnaps will remain crunchy and green. If you want the sugarsnaps to be soft then leave to cook for longer adding splashes of water little by little until the veggies are completely cooked soft.
- I finished the dish squeezing lemon over the dish because I used pork sausages and pork and lemon work very well. If you're using any other type of meat or veggie/vegan sausages the lemon juice can be omitted.
This time I made it with home-made pork sausages, mushrooms and sugarsnaps as the main ingredients, but you can use any veggie you have laying around your fridge and with any meat or veggie/vegan sausage.
What I always suggest though is having a mix of soft and crunchy veggies just to make it more interesting with different textures and flavours, the basic seasoning (onion, bell peppers, dill and garlic) remain the same.
One of things I love about this stir fry is that it’s ready and done in 20 minutes, perfect for mid-week cooking, don’t you love when you can make something quick and delicious when you get home after work? I do!!
And the flavour combination of the fresh dill, lemon and sweetness of the peppers and onion really gives it a unique “sweet and sour” taste that is not normally found in stir fries.
SAUSAGE STIR FRY TO GO
I even go further with my stir fries making them in the morning to fill pita breads or wraps so I can take some food on the go.
And this stir fry is also perfect for that because everything is chopped in small bit size pieces and doesn’t have any sauce that can drizzle, make the bread soggy or pour out whilst travelling or eating making it super easy to eat whilst on the go, it even tastes nice when is not absolutely hot making it perfect for work lunches.
BEST VEGETABLES FOR STIR FRIES
Although you can make a stir fry with any vegetables I find some veggies work better than others, here are my favourite staple veggies for stir fries:
STIR FRY BASIC VEGETABLES
Onions, bell peppers (any colour), garlic, spring onions, either sliced or in bite size pieces.
BEST VEGETABLES FOR STIR FRY
I like to combine soft and crunchy vegetables to make it more interesting when eating, so I like to use:
Soft vegetables
Mushrooms, aubergines, courgettes, savoy cabbage, pak choi, roasted butternut squash, spinach. These are the veggies that will become soft when cooked quickly
Hard vegetables
Sugarsnaps, green beans, carrots, cabbage, broccoli, broad beans. These are the veggies you can leave crunchy to add texture to the stir fry.
