Last week I posted How to Make Almond Flour not only because is super easy to make at home, but is also low carb and gluten free, and having a gluten free diet I’m always looking for alternatives to the over processed white flours.
I LOVE BREAD!! And not being able to eat traditional bread is a killer for me, plus, I’m not very good when it comes to kneading and dough making, so making this recipe was like finding the holly grail.
I find this almond bread holds its shape quite well and because of the baking powder it grows a lot whilst cooking making it spongy, soft and buttery.
Is soft yet strong enough to spread jam, cream cheese or peanut butter over it, and because it has butter you don’t really need to add more butter to get the taste.
WHAT DISHES TO MAKE WITH ALMOND BREAD
This bread is great to use as you would any traditional bread, I like to make sandwiches, to accompany soups, with salads or as a base for party finger food topped with different cured meats, cheeses, smoked salmon or any other topping of your preference.
Now, I’ve only made this recipe once at a time, I mean, one cup at a time, so couldn’t say if you need to add more minutes whilst cooking several cups, but this will be easy to understand as the finish bread is super spongy and soft, so if you haven’t got this texture just add an extra 20 to 30 sec at a time until you get the right consistency.
FREEZING ALMOND BREAD
You can freeze this bread but don’t leave it for too many days as the ice will make it watery. Normally when I want to make a big batch I save each whole piece in a plastic bag and put it in the fridge for max 5 days. Generally I make all the breads on Sunday and freeze them for the week.
To thaw it I just leave it out in the morning so by the time I come back home is already thaw and I just have to warm it up. I like to warm it up by slightly toasting it in the toaster or in the oven.
STORING ALMOND BREAD
To store it I like to wrap it in a bag to keep as much air out so it keeps soft as you would with any other bread. Otherwise, I find it easier to make a batch and freeze it as I mentioned above.
VEGAN EGG SUBSTITUTE
For a vegan bread you can substitute the egg for these vegan egg alternatives: VeganEgg, Free & Easy Egg Replacer, Bob’s Red Mill All Natural Egg, Orgran Egg Replacer, Ener-G Foods Egg Replacer, all found on-line.
Unfortunately I haven’t used any of these brands because where I live I can’t find any of them, but, you can order them online. I have used an egg replacer that I find in a shop near me but is made by a very small local company and I think you can only get it here, hence why I’m not suggesting that brand.
I really hope you enjoy making this recipe, is so easy, quick and healthy that’s really worth putting it in your every day recipes. And if you’re interested in other breads that are vegan, gluten free and super healthy, you have to check out my series How to Make Venezuelan Arepas.
