My mom’s baked eggs recipe is one of those dishes that brings me nostalgic memories of when I was at home. I remember my mom in the kitchen preparing these eggs so I had a delicious dinner for when I got back from university in the evening.
Despite this dish being the easiest recipe ever it is gastronomically delicious, plus it only uses a handful of ingredients and requires no cooking skills at all !!
Another great thing about this dish is that it can be prepared for a large number of people without adding extra work, perfect for when cooking for a large number of people. You can also prepare it in advance and reheated before serving.
At home I prepare this dish quite often because of how easy and quick it is to make, but also because is gluten and wheat free, lactose free and I can make the tomato sauce to my taste, which is the only cooking part of the dish.

PRINT THE RECIPE
- 1 Cup of good quality tomato sauce
- 1 Cup of chopped fresh tomatoes
- A handful of fresh Basil
- 1 Tsp of dried Oregano
- 1 Tbsp of fresh chopped Parsley
- 100 gr of Ham slices Any type of ham you like
- 4 Free Range eggs
- Black pepper to taste
- Parmesan or Cheddar cheese optional
To a baking tray or tin add a layer of the tomato sauce. Be sure it covers the entire base of the tray.
On top of the tomato sauce add the fresh chopped tomatoes and then sprinkle some of the dried Oregano.
Then add a layer of ham in slices being sure to cover all the tomatoes
On top of the ham add a few leaves of fresh Basil. These can be whole leaves or if you prefer you can finely chop them and sprinkle them on top
Then add the eggs, adding one by one being careful not to brake the yolk.
Sprinkle a pinch of salt and black pepper and follow by placing a few leaves of Basil on top
If you choose to add the cheese, then sprinkle some on top of the Basil leaves
Place the tray in a preheated oven at 220 degrees for 10 to 15 minutes until the egg is fully cooked and the cheese melted. If you prefer the cheese to be crispy, leave the tray in the oven for 5 minutes using the Grill function.
Serve with a few slices of crusty bread

Tips to get the Best of this Baked Eggs Recipe
The key deliciousness of this super simply recipe is the quality of the ingredients. I try to buy the best tomatoes possible and this means the most ripen tomatoes I can find. Sometimes I use Cherry tomatoes or Plum Tomatoes, but I think it will be superb with super sweet and tangy heritage tomatoes.
The ham and eggs are also very important. I like to use Prosciutto crudo (Italian cured ham) specially the one from Calabria because I like to contrast of the saltiness with the sweetness of the tomatoes. But if you’re using cooked ham a good suggestion would be to use good quality Farmhouse cooked ham. And eggs, of course nothing else than free range, and if you can get free range organic even better!!
