It is a fact that I don’t like sandwiches! Specially those tasteless, calorific and plastic like found in supermarkets and cheap delis. Very very rarely you’ll see me buying a sandwich and even more rarer seeing me eating a sandwich walking on the street, for every meal I have to put my feet under the table as we say at home.
Even if I have to have a light or cold lunch I need to feel I am eating something, and something nice and tasteful.
So in this blog I want to show you how I make my Lunch Box Salad. Yes as you read it, it is a salad and is not boring!
One problem I find with salads you buy in restaurants or as take away is that they are completely dry, have no dressing or even if it had the dressing tends to be horrible, and they come with no seasoning, really any food like that would be depressing.
I understand that when we talk about working lunch is very easy to make a sandwich or to buy it, but really? A sandwich? And if you’re in a calorie control diet the sandwich is really out of the question, so what would you have then? 3 pieces of lettuce with 2 slices of cucumber and 2 cherry tomatoes with no salt, pepper, olive oil or dressing…. god it makes crinch just to think about it, but that’s about 80% of salads you get in this country.
So ditch the boring calorific sandwich for this super tasty salad that you can make with rice, cous cous or quinoa. It last easy 3 days in the fridge and keeps well throughout the day until lunchtime. I would even say I prefer to eat this salad room temperature than just out of the fridge.
PRINT THE RECIPE
- 2 Cups of left over rice quinoa or cous cous
- 1 Cup of Cherry or Plum tomatoes
- 1 Cup of Cucumber
- 1 Spring onion
- 1/4 Cup of chopped fresh Dill
- 1/4 Cup of chopped fresh Coriander
- 1 Cup of chopped Red Pepper
- 1/2 Cup of Black or Green Olives whole or chopped in quarters
- 1/4 Cup of Sun Dried Tomatoes
- 1 Lime
- 1/4 - 1/2 Cup of Extra Virgin Olive Oil
- 1/4 Tsp of hot Paprika
- 1/4 Cup of Cured Ham optional
In a bowl place the rice, quinoa or cous cous
Add all the chopped vegetables, olives, sun dried tomatoes and mix everything well
Then add the fresh Dill and Coriander and mix well
After mixing add the Extra Virgin Olive Oil and season with salt, mix everything well
After mixing everything well, leave to rest for 1 hour so all the flavours mix well.

I like to eat this salad on its own as the rice is already a filling ingredient, but if you would like to accompany this with crusty bread then by all means go for it!
